Georgia's Savoury Toast

Ingredients

• 4 slices of thick-cut bread (white or wholemeal)

• 4 tbsp tomato paste

• 3 large eggs

• 1/2 cup diced vegetables (e.g., onion, capsicum, tomato, or zucchini)

• 2 rashers of bacon, cooked and crumbled (optional)

• 1 cup shredded cheese (cheddar, mozzarella, or a blend)

• Salt and pepper, to taste

• 1 tsp olive oil or butter (for sautéing vegetables)

• Optional garnish: chopped parsley or spring onion

Method

1. Prepare the Bread:
   Preheat your oven to 180°C (350°F). Place the slices of bread on a baking tray lined with parchment paper.

2. Spread the Base:
   Spread a generous tablespoon of tomato paste evenly over each slice of bread.

3. Cook the Vegetable Mixture:
   Heat the olive oil or butter in a small frying pan over medium heat. Add the diced vegetables and sauté for 2-3 minutes until softened. Remove from heat and let cool slightly.

4. Mix the Egg Topping:
   In a bowl, whisk the eggs together with a pinch of salt and pepper. Stir in the cooked vegetables and crumbled bacon (if using).

5. Assemble the Toast:
   Spoon the egg and vegetable mixture evenly over the tomato paste-covered bread. Be sure to distribute the mixture to the edges of each slice.

6. Add the Cheese:
   Sprinkle shredded cheese generously on top of each slice, ensuring full coverage.

7. Bake to Perfection:
   Transfer the tray to the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly and the egg mixture is set.

8. Serve:
   Remove from the oven and let the savoury toast cool slightly before serving. Garnish with chopped parsley or spring onion if desired.
