Sometimes you want quick, simple and satisfying. A caprese salad with fresh ingredients to accompany a pizza is devine. The key is to ensure you get fresh mozzarella in brine. This will be more tender and have a more complex flavour than the vacuum packed mozzarella.
Fresh mozzarella (in brine): 200g, sliced
Tomatoes (heirloom, truss etc - something that is fresh and has a lot of flavour) 2, sliced
Basil leaves: Handful
Olive oil to taste
Salt and pepper to taste
Arrange the mozzarella, basil and tomato on a plate.
Immediately before serving, season with salt and pepper and drizzle olive oil over the top.
